Blackstone Chicken Fried Rice

A quick and easy Blackstone fried rice recipe with chicken! We start with precooked rice and frozen veggies to make this as simple as possible.

Ingredients
  

  • 1 lb boneless skinless chicken breasts
  • 2 tbsp vegetable oil
  • 4 cups white rice cold and cooked
  • 2 garlic cloves minced
  • 1 1/2 cups frozen peas and carrots blend
  • 4 green onions chopped
  • 3 large eggs beaten
  • 2 tbsp sesame oil
  • 3 tsp soy sauce
  • 1/2 tsp ground pepper coarse

Equipment

  • 1 Blackstone Griddle
  • 1 large spatula

Method
 

  1. Preheat the Blackstone griddle over medium low heat. (about 350 F)
  2. Add the vegetable oil onto the griddle and spread it around. Add the diced chicken to the vegetable oil and sauté the chicken is cooked through (4-5 minutes). Push the chicken to the cooler side of the grill.
  3. Then add in the peas and carrots mix, garlic, and the green onions. Sauté the vegetables until they're heated through.
  4. Move the vegetables to a cool part of the griddle and then add the beaten eggs to the heated side of griddle.
  5. Scramble the eggs, then move them to the cooler side of the griddle with the veggies.
  6. Add the cold cooked rice to the griddle and top it with the sesame oil, soy sauce, and black pepper. Sauté the rice on the griddle for 3-4 minutes until heated through and slightly browned.
  7. Combine the rice, chicken, veggies, and eggs together on the griddle. Serve immediately while warm and enjoy!

Notes

  • Cold Rice: Make sure to use cold, precooked rice to avoid mushiness. If you start with warm rice, it will turn mushy!
  • You can make a shrimp fried rice, pork fried rice, or beef fried rice following these same steps.
  • Cook in Layers: Cook the ingredients in stages for the best texture and flavor. Just push each cooked ingredient to the side as you finish cooking the remaining ingredients.
  • Season Well: Taste as you go and add more soy sauce or pepper if needed.
