- Preheat the Blackstone griddle over medium low heat. (about 350 F)
- Add the vegetable oil onto the griddle and spread it around. Add the diced chicken to the vegetable oil and sauté the chicken is cooked through (4-5 minutes). Push the chicken to the cooler side of the grill.
- Then add in the peas and carrots mix, garlic, and the green onions. Sauté the vegetables until they're heated through.
- Move the vegetables to a cool part of the griddle and then add the beaten eggs to the heated side of griddle.
- Scramble the eggs, then move them to the cooler side of the griddle with the veggies.
- Add the cold cooked rice to the griddle and top it with the sesame oil, soy sauce, and black pepper. Sauté the rice on the griddle for 3-4 minutes until heated through and slightly browned.
- Combine the rice, chicken, veggies, and eggs together on the griddle. Serve immediately while warm and enjoy!
Notes
- Cold Rice: Make sure to use cold, precooked rice to avoid mushiness. If you start with warm rice, it will turn mushy!
- You can make a shrimp fried rice, pork fried rice, or beef fried rice following these same steps.
- Cook in Layers: Cook the ingredients in stages for the best texture and flavor. Just push each cooked ingredient to the side as you finish cooking the remaining ingredients.
- Season Well: Taste as you go and add more soy sauce or pepper if needed.
