Blackstone Chicken Fajitas Recipe

An easy juicy Blackstone chicken fajitas recipe where you first marinate the chicken and then cook them on the Blackstone to give them a quick char.

Ingredients
  

  • 2 lb chicken breast boneless skinless, cut into 1/4" strips
  • 1/3 cup avocado oil + more for the griddle
  • 1 lime 2 Tbsp fresh juice
  • 2 tsp cumin powder
  • 1 tsp paprika sweet or smoked
  • 2 teaspoons sea salt
  • 1 tsp garlic powder
  • 1/2 tsp black pepper coarse ground
  • 3 bell peppers sliced
  • 2 onions sliced
  • tortillas
  • optional toppings sour cream, salsa, gaucamole, shredded cheese

Method
 

  1. Add the avocado oil, fresh lime juice, chili powder, ground cumin, garlic powder, paprika, oregano, salt, and pepper to a medium size low shallow bowl and mix well. Add in the chicken slices and toss to combine. Cover the bowl with plastic wrap and marinate the chicken for 2 hours. Remove the chicken from the marinade and discard it.
  2. Preheat your Blackstone griddle grill to medium-high heat. Brush it with high-heat oil (such as avocado oil).
  3. Add chicken to one side of the preheated griddle and the peppers and onions to the other. Cook for about 6-8 minutes until the chicken and vegetables are a little charred and the internal temperature of the chicken is 165 F when tested with a digital meat thermometer.
  4. Combine the chicken, onions, and bell peppers together. Remove the Blackstone fajitas from the griddle and set them aside.
  5. Heat the tortillas on the griddle for about 1 minute to warm them up.
  6. Immediately serve the chicken fajitas with warm tortillas and toppings such as salsa, fresh cilantro, guacamole, and sour cream. Enjoy!

Notes

  • Marinating the chicken is totally optional! If you want to make this recipe even quicker, just coat the chicken strips with a blend of avocado oil and fajita seasoning.
  • Don't overcrowd the griddle or grill, make sure all of the ingredients have plenty of space to get crispy and char.
  • Customize the seasonings to suit your taste preferences, feel free to add more or use your favorite store-bought seasoning instead of our homemade fajita seasoning recipe.
